Kitchen Princess: Quiche Lorraine

Dear friend,

We received a surprise call yesterday to say that some old friends who used to live in Holland were visiting and we're going to drop in on us. The boys were really excited and decided that they wanted to make muffins and scones for their friends.

I am not renowned for my baking skills, in fact hubby is the chef in our house and has named me ironically kitchen princess. But the boys got me in the mood for a bit of cooking too. Whilst they were busy baking muffins and scones (yes I did use packet mixes) I got to grips with making a Quiche Lorraine.


Basic Shortcrust pastry
225g flour
100g butter
Pinch salt

Bacon blocks
1/2 onion
200g creme  fraiche
200g cheedar cheese
100ml milk
5 eggs

To make the pastry:
  1. 1. Sift the flour into a large bowl, add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
  2. 2. Stir in the salt, then add 2-3 tbsp water and mix to a firm dough. Knead the dough briefly and gently on a floured surface. Wrap in cling film and chill for 30 minutes.
  3. 3. Roll out the pastry on a light floured surface and line a 22cm/8½inch well-buttered flan dish.  Chill again.
  4. 4. Preheat the oven to 190C/375F/Gas 5.
  5. 5. Remove the pastry case from the fridge prick all over with a fork and bake for 20 minutes. 
  6. To make the filling:
  7. 6. Reduce the temperature of the oven to 160C/325F/Gas 3.
  8. 7. Sprinkle the cheese into the pastry base. Fry the bacon pieces until crisp with the chopped onion and sprinkle over them over the top.
  9. 8. Combine the eggs with the milk and creme fraiche in a bowl and season well. Pour over the bacon and cheese. 
  10. 9. Bake for 30 minutes or until set. Remove from the oven and allow to cool and set further. 

We served it with a fresh tomato and moserella salad. It was delicious! I was very proud of myself! 

The boys masterpieces turned out to be extra yummy too!
